Ripasso is a new style of Valpolicella from the late 20th century. The process involves a brief “ripasso” (re-passing) on the grape skins which leads to extra body, flavour and alcohol content.
The highest quality Corvina, Rondinella and Molinara grapes are used from the classic area of Valpolicella north of Verona.
